Fatty acids make up a significant component of our cell membranes, including those of the mitochondria. Omega-3 fatty acids are often linked to improvements in health with regards to lowering inflammation, and improving immune function. However, certain oils from seeds, e.g., canola, safflower, which contain high amounts of polyunsaturated fatty acids (PUFAs) can lead to oxidative stress within the body that have a damaging effect on membrane structure and integrity.
